In a humble family home near Ubud, Wayan and his wife Puspa will take you far away from the Bali you think you know. To taste Bali is to understand Bali, so forget Bintang and jaffles; this is about vibrant, wholesome, organic food made with love.

You will pick most of the ingredients straight from Wayan’s organic garden but your day starts with Puspa at the Ubud markets. Puspa will introduce you to her friends and begin the story of Balinese food by identifying spices, fruits and vegetables and explaining their uses.
You will see just why the bamboo, banana and coconut trees are revered as ’magical’ by the local people who utilise every last sinew, as they have for centuries.
Back at home, refresh the palate with a coconut and lime juice (served inside the coconut, to save on washing up) and get to work with your pestle mortar. That secret spice blend won’t grind itself!
